So, I'm on Day 4 of TheWhole30 "food freedom" program (they don't call it a diet.....). I haven't killed anything yet. Yet. ........................YET. Eating food, with no sugar at all, is, well, interesting. You have to plan your daily meals like a mo fo. Then, "eat" your plan. Checking labels at the grocery store was................time consuming. But, overall, I'm still pumped to try this thing out through the end. As _they_ say, "After all, it's only 30 Days."
So, as I promised @rcgII ...... here is my first TheWhole30 meal done in the Insta Pot.
Chicken Cacciatore ( 4*** RATING by me, will do again)
(here is what I did, feel free to change it as u see fit, again, I stayed by their rules, no sugar. Period. ALL of my items are TheWhole30 "approved," btw.)
4 Tblspns Olive Oil
6 chicken thighs, bone-in
1/2 tspn salt
1/2 tspn of pepper
1/2 onion, diced
1/2 red bell pepper, chopped
1 Cup of 'shrooms
2 cloves of garlic, minced
2 Cups of chopped tomatoes
1 & 3/4 Cups of water

4 Tblspns Olive Oil
6 chicken thighs, bone-in
1/2 tspn salt
1/2 tspn of pepper
1/2 onion, diced
1/2 red bell pepper, chopped
1 Cup of 'shrooms
2 cloves of garlic, minced
2 Cups of chopped tomatoes
1 & 3/4 Cups of water
- spread olive oil out evenly
- salt, pepper and brown the chicken thighs on each side on SAUTEE - LOW mode
- remove thighs, set aside, keeping all "juices" in Insta Pot
- dump in onions / peppers and SAUTEE - LOW for about 3 min's
- dump in the 'shrooms, continue to SAUTEE - LOW for about another 2-3 min's
- dump in the garlic, continue to SAUTEE - LOW until you smell 'em garlic's reeel gooood
- dump in the tomatoes, stir Insta Pot
- put chicken thighs back in the Insta Pot
- dump in the water
- close the lid
- MANUAL SETTING for 12-14 min's (I did 11 and the chicken read 160F at the bones, so I put back in another 2 min's to get the reading to 165F rt by the bones.......)
- QUICK RELEASE
