Given the initial discussion on the pod today, share some of your favorite recipes. I'll start with a few.
My go-to turkey:

Root vegetable gratin - https://www.saveur.com/celery-root-carrot-and-potato-gratin-recipe
Hugh Acheson's Collard greens -
3 TBSP olive oil
1 large yellow onion, diced
3 lbs of collards, cleaned well and torn into bite sized pieces
1/4 C sherry vinegar
2 TBSP sorghum
4 C chicken stock
a couple of slices of smoked bacon or 1 small ham hock
1 TSP kosher salt, plus more to taste
1/2 TSP red pepper flakes
1 TBSP unsalted butter
1. heat oil over medium
2. add onion and cook until starting to brown
3. add collards, in batches, until all starting to wilt
4. add vinegar and let cook down about 2/3
5. add sorghum, stock, 2 C water, pork, salt, and red pepper flakes
6. cook covered for about 1 1/2 hours, stirring every now and then
7. Taste for seasoning, add butter, and serve
