If you have an Insta Pot, lemme share with you something that is freakin' deeeeelish and _simple_ to do.

Chicken Taco's

  • 2 cups chunky salsa (I use an entire jar of Mateo's HOT salsa)
  • 1 cup chicken broth
  • 1 taco seasoning packet
  • 1 lb chicken breasts boneless, skinless
  • 8 crunchy taco shells
  • 2 cups shredded romaine lettuce
  • 1 cup Mexican blend grated cheese
This is how I do it, your mileage may vary...........
  1. Pour about 1/2 of the chicken broth in the Insta Pot.
  2. Add chicken breast to Insta Pot, pour the rest of the chicken broth over the breasts. Pour salsa over the breasts, then dust off with the entire taco seasoning package.
  3. Close lid and set pressure release to Sealing.
  4. Press Manual or Pressure Cook button and adjust time to 10 minutes.
  5. When the timer beeps, allow pressure to release naturally for 10 minutes and then quick release remaining pressure. Unlock lid and remove it.
  6. Use two forks to shred chicken.
  7. Serve chicken in taco shells topped with shredded lettuce and cheese.
