Memphis Style Ribs

Picked up two racks of baby backs for tomorrow. Looking to do Memphis dry ribs (my wife will likely sauce one of the racks).

Any recommendations on recipes? We will want it close to fall off the bone. Do you wrap your Memphis style ribs?
